Restaurant Style Tandoori Chicken and green chutney (step by step with pictures)

Tandoori chicken is a dish originating in the Indian subcontinent. It is widely popular in South Asia, Malaysia, Singapore, Indonesia, the Middle East and the Western world. It consists of roasted chicken prepared with yogurt and spices. The name comes from the type of cylindrical clay oven, a tandoor, in which the dish is traditionally prepared. But here we shall prepare tandoori chicken in microwave oven.

INGREDIENTS ( For 2 person)

FOR TANDOORI CHICKEN

  • Chicken (with bone)- 500 gm
  • Hung curd- 4 to 6 tbsp
  • Butter- 1 tbsp
  • Coriander powder- 1/2 tbsp
  • Kashmiri Chili powder- 2 tbsp
  • Garam masala powder- 1/4 tbsp
  • Garlic ginger mince- 1 and 1/2 tbsp
  • Black pepper powder- 1/2 tsp
  • Cumin powder- 1/2 tbsp
  • Lemon juice- 2 tbsp
  • Kasuri methi- 1/2 tbsp
  • Edible orange red color- two pinch
  • Salt- as per your taste.

FOR GREEN CHUTNEY

  • Mint leaves- 1/2 cup
  • Coriander leaves- 1/2 cup
  • Green chili- 2 to 4 (i have taken 4 for more spicy)
  • Garlic- 3 cloves
  • Ginger- 1/2 inch
  • Salt- to taste
  • Lemon juice- 1 tbsp
  • Regular curd- 3 tbsp (you can use more for more light color of chutney).

METHOD FOR TANDOORI CHICKEN:

Here we are going to use two types of marination process. 1st with lemon juice and kashmiri chilli and the 2nd with curd/yogurt and spices. For restaurant style desired colour you will have to use orange red edible colour.

Steps:

  • 1st marination process- Take a bowl and add 1 tbsp kashmiri chili powder, 1 tbsp lemon juice and some salt. Mix it well.

  • In that mixture add chicken pieces. The chicken pieces must be slit by a sharp knife as shown in the picture below. Mix it well. Marinate chicken at least  for half an hour.

  • 2nd marination process- Take another bowl for curd marination. In the bowl add hung curd and other dry spices along with edible color. Here, I am presenting the pictorial process.

Add 1 tbsp lemon juice and salt to taste. All spices, color and curd in the bowl.
  • Mix all the ingredients well and transfer the ‘half an hour marinated chicken’ in this curd marination.

Cover the bowl with lid on. put into the refrigerator for at least 8 hours. And for better result marinate it for 12 hours. Mine is 8 hr marinated.
  • Generally people cook it on grill mode. But here I am cooking in convection mode. 
  • Preheat your oven in convection mode on 200 degree Celsius.
  • Place the chicken pieces on the upper stand/shelf of the microwave oven (pic below).

  • Keep the bowl underneath the upper stand/shelf for sometime till the extra marinated mixture stops dropping.
  • Now, place the upper stand/shelf along with the underneath bowl in preheated microwave oven (The bowl collects all the extra marinated mixture droplets that drop when the the stand is kept inside the microwave oven). After the stand settles inside the oven, remove the bowl carefully out of the oven.

  • Cook the marinated chicken in convection mode on 180 degree Celsius for 10 minutes.
  • After 10 minutes, take out the stand. Place the bowl below the stand. Turn all the chicken pieces upside down and apply butter on the top with a brush.

  • Now, Place the chicken stand in microwave oven for another 10 minutes. After 10 minutes take out the chicken stand and apply butter on both sides of the chicken pieces as in the previous step. Now, cook it for another 20 minutes on 200 degree Celsius.
  • You may cook for some more minutes as per the requirement. My chicken tandoori was perfectly cooked in 20 minutes. Keep an eye 🙄 over the chicken pieces from outside the oven glass while its getting cooked. :mrgreen: Don’t involve yourself in facebook/ TV serials. :mrgreen:

METHOD FOR CHUTNEY:

  • Take the chutney ingredients, as mentioned at the start of this article, in a grinder and grind it till a smooth paste. Your chutney is ready.
